Cooking Instructions for Free Range Spatchcock Chicken
Preparation (10 minutes)
1. Preheat your oven to 200°C (fan 180°C) or gas mark 6.
2. Pat the chicken dry with a paper towel and season generously with salt, pepper, and your favourite spices or marinade. For added flavour, rub the skin with olive oil and fresh herbs like rosemary or thyme.
Roasting Method
1. Place the spatchcock chicken on a roasting tray, breast side up, and tuck the wings underneath.
2. Roast in the oven for 45-50 minutes, or until the internal temperature reaches 75°C at the thickest part of the breast. Baste occasionally for extra juiciness.
Grilling Method
1. Heat your grill to medium-high. Place the chicken skin side down on the grill and cook for 10-15 minutes.
2. Flip and continue grilling for another 15-20 minutes, or until fully cooked, ensuring the internal temperature reaches 75°C.
Tips for Perfect Spatchcock Chicken
Let the chicken rest for 10 minutes after cooking to lock in the juices before carving.
