Fillet steak is the most tender cut of beef. It has little fat, and is best cooked and basted in butter and a little oil. As it is such a tender piece of meat, you can serve it as rare as you like. Fillet steak is finely marbled and comes from the little-worked centre of the sirloin along the back of the cow. Treat this prime ingredient with respect and cook it with care. You and your guests will be rewarded with a truly memorable dish.

We source local meat from farms in Wiltshire, Somerset and the South West. Wiltshire County Fayre makes sure that we get the absolute best and most sustainable breeds for the season. Our free range cows feed on grass and lead happy lives in the great British countryside. Fillet Steak Cooking Instructions

Grill Method:

Preparation: Remove the fillet steak from the fridge 30 minutes before cooking to ensure it cooks evenly.
Seasoning: Rub with olive oil, sea salt, and freshly ground black pepper to enhance the natural flavors of the fillet.
Preheat the Grill: Heat your grill or frying pan to high heat, which is crucial for a perfect sear on your fillet steak.
Cooking: Grill the fillet steak for 3-4 minutes on each side for a medium-rare finish. The internal temperature should reach 52-54°C.
Resting: Rest the steak for 5 minutes under foil to allow the juices to settle.
Serve: Serve with tender asparagus spears and a drizzle of red wine reduction for an elegant dinner.

Oven Method:

Preparation: Preheat your oven to 200°C (180°C fan) or gas mark 6. Bring the fillet steak to room temperature before cooking.
Seasoning: Rub with olive oil, salt, and pepper to create a delicious crust when seared.
Searing: Sear the fillet steak in an ovenproof pan for 2-3 minutes on each side until browned.
Oven Cooking: Transfer the pan to the oven and cook for 8-10 minutes for medium-rare.
Resting: Let the steak rest for 5 minutes under foil.
Serving: Serve with asparagus and a rich red wine reduction for a gourmet meal.

Storage Instructions

To ensure the freshness and quality of Fillet Steak, proper storage is essential. Store the fillet steak in the refrigerator at a temperature below 40°F (4°C). It is recommended to keep the steak in its original packaging or place it in an airtight container or resealable plastic bag to prevent any potential contamination or exposure to air. Properly stored, fillet steak can be refrigerated for up to 3-4 days. If you don't plan to use it within that time frame, you can also freeze the fillet steak. Wrap it tightly in plastic wrap or aluminum foil and place it in a freezer-safe container or bag. Frozen fillet steak can maintain its quality for approximately 3-4 months. The only component from our packaging that can’t be recycled are the foil liners which need to be go in household waste; the poly bags meat comes in needs to go in plastic recycling.
